Which Street BBQ rub for which cook

  • Skewers and satay: Balinese Satay rub on chicken thigh or pork neck, threaded onto skewers and cooked hot over charcoal.
  • Lamb, chicken and fish: Mumbai Tikka, a tandoori-style blend. Great on lamb cutlets, slow-cooked lamb shoulder, chicken drumsticks and firm white fish.
  • Italian grilling: Tuscan Alle Brace (alla brace means cooked over the coals) for lamb, chicken, pork chops and grilled vegetables.
  • Beef: Brazilian Asado for picanha, rump and skewered beef cooked churrasco style.

How to use them

Season generously and massage the rub into the meat so the spices rehydrate and stick. For skewers and thin cuts, 30 minutes to a couple of hours in the fridge is plenty. Most of these blends also work as a table-side seasoning sprinkled over the finished dish. For tikka, mix the rub with plain yoghurt for a quick marinade on chicken or lamb.

Pair it up

These rubs suit hot and fast cooking. A kettle, hibachi or kamado is ideal. Serve with something from pickles & sides, and if you want to learn to run your fire, check our BBQ classes.
