Collection: Cutting Boards

A brisket needs a board bigger than the brisket. Rest it, slice it and serve it on the same surface, and catch the juices instead of losing them across the bench.

We range The Australian Brisket Board in Mini (40 x 40cm), Medium (60 x 40cm) and Large (70 x 45cm), made from reclaimed Australian hardwood with juice grooves, handle grips and rubber feet. For everyday prep there are Peer Sorensen end grain and long grain boards and Teakhaus boards and butcher blocks, plus the Tucka Tribe carve and serve board and Hardcore Carnivore disposable boards for raw meat.

Choosing a cutting board

  • Size: pick a board longer than your biggest cook. A whole packer brisket wants 60cm or more.
  • End grain or long grain: end grain is gentler on knife edges and hides cut marks; long grain is lighter and usually cheaper.
  • Juice groove: a must for resting and slicing brisket and roasts.
  • Raw meat: use a separate board, or disposable boards, and wash timber boards with hot soapy water.

Board care

Hand wash, dry it standing up, and rub in board butter or food-safe oil when the timber looks dry. Never soak a timber board or put it in the dishwasher.

FAQs

What size board do I need for brisket?

Bigger than the brisket. For a whole packer, around 60cm long or more, with a juice groove.

End grain or long grain?

End grain is kinder to knife edges and self-heals better. Long grain boards are lighter and usually cheaper.

How do I clean a timber board?

Hot soapy water, rinse, dry it upright. Don't soak it and don't put it in the dishwasher.

What is board butter?

A blend of food-safe oil and wax that conditions timber boards and helps them resist moisture.

What are The Australian Brisket Boards made from?

Reclaimed Australian hardwood, per the maker, so each board's size and colour varies a little.

Can I use one board for raw and cooked meat?

Use separate boards, or wash thoroughly between uses. Disposable boards make raw meat prep easy.
