Collection: Parrilla & Asado Grills

A parrilla is the Argentine way to cook over live fire. You burn wood or charcoal in a brasero, rake the embers under the grill and raise or lower the grate with a wheel to control the heat. It is slow, social cooking that suits whole cuts, steaks, chorizo and vegetables.

We stock Tagwood BBQ, built from heavy-duty 304 stainless steel with height-adjustable Santa Maria grates. The BBQ03SS and BBQ03SI are the freestanding starting point. The BBQ06SS, BBQ23SS and BBQ26SS are the XL models for bigger crowds, and the BBQ05SS, BBQ08SS, BBQ25SS and BBQ28SS are built-ins for outdoor kitchens.

When choosing, think about how many you cook for and whether the grill will live on a deck or in a masonry build. Built-ins need the cut-out planned first, so bring your measurements in and we will help you match the model.

How to choose a parrilla grill

A parrilla is the Argentine asado grill: you burn hardwood or charcoal in a brasero (fire basket), rake the embers underneath, and wind the grate up or down to control the heat. It's slow, social, live-fire cooking, and nothing beats it for beef ribs, chorizo, provoleta and whole chooks.

We carry Tagwood BBQ parrillas, with freestanding and built-in models.

What to look for

  • Height-adjustable grate: the heart of a parrilla. Raise it to cook gently, lower it to sear.
  • Brasero: a fire basket that burns wood down to embers you can rake under the grill.
  • Grilling zones: a second grate, griddle or clamp grill lets you cook different things at different heats.
  • Material: 304 stainless steel lasts longest outdoors. The Tagwood BBQ03SI pairs stainless grates with a painted steel body for a lower price.
  • Freestanding or built-in: built-in models drop into an outdoor kitchen bench.

Which one?

  • First parrilla: Tagwood BBQ03SS (four grilling areas, all 304 stainless) or BBQ03SI.
  • More room plus a clamp grill: BBQ06SS.
  • Big asados: BBQ23SS XL or BBQ26SS XL (five zones).
  • Outdoor kitchens: BBQ05SS, BBQ08SS, BBQ25SS or BBQ28SS.

Fuel it right

Ironbark splits burn hot, long and clean. Lump charcoal works too. Burn the wood down to embers in the brasero before you start cooking.

FAQs

What's the difference between a parrilla and a BBQ?

A parrilla cooks over wood embers raked from a separate fire, with a grate you raise or lower to control heat. Most BBQs control heat with burners or vents.

What is an asado?

The Argentine tradition of slow-grilling meat over wood embers, usually as a long, social cook.

What wood should I use in a parrilla?

Dense hardwood like ironbark, or lump charcoal. Burn it to embers before you cook.

Can I build a parrilla into my outdoor kitchen?

Yes. Tagwood's BBQ05SS, BBQ08SS, BBQ25SS and BBQ28SS are built-in models in 304 stainless steel.

What is a Santa Maria grill?

A grill with a grate you wind up and down over the fire, the same height control Tagwood uses on its parrillas.

Which Tagwood is best for beginners?

The BBQ03SS, Tagwood's flagship with four grilling areas. The BBQ03SI is the same layout for less.
