Collection: Offset Smokers

An offset smoker is the classic Texas stick burner: a firebox off to the side, a long cook chamber and a chimney pulling clean wood smoke across the meat. It takes more attention than a pellet grill, and that is the point. Managing the fire is half the fun, and nothing else gives you that bark and smoke ring.

Our offsets come from Silver Creek Smokers, hand built in Melbourne. The Lone Star and the Iron Age are proper backyard pits made from heavy steel, tested for clean burns and good draw so they hold temperature for long cooks.

Silver Creek pits are made to order, so talk to us about lead times, sizing and options before you buy. If you are new to stick burning, ask about our classes in Brunswick and learn fire management before your pit arrives.

Offset smoker buying guide

An offset smoker burns wood in a firebox beside the cook chamber. Heat and smoke travel across the meat and out the chimney. Good offsets are built from heavy steel so they hold heat and draw cleanly.

Why handmade matters

Silver Creek Smokers are hand built in Melbourne and tested for clean burns and correct draw. Heavy steel means steadier temperatures and less fuel.

Running an offset

Build a small, hot, clean fire and feed it a split at a time. Aim for thin blue smoke, not thick white smoke. It takes practice, which is why we recommend a class.

FAQs

What wood should I use in an offset smoker?

Seasoned hardwood splits. In Australia, ironbark, red gum and fruitwoods are popular. Avoid green or treated wood.

Are offset smokers hard to use?

They take more attention than a pellet grill or kamado because you manage a live fire. Most people get the hang of it after a few cooks, and a class speeds that up.

How long does a Silver Creek smoker take?

Silver Creek pits are made to order, so lead times vary. Contact The Que Club for the current wait.
