We’re keeping things casual with an open-house style hangout—giving you the chance to chat with Jess, grab a signature on your copy of PRIME, and talk all things live-fire cooking and BBQ.

To make the afternoon even better, we’ll be pouring cold beers and serving up a selection of mouthwatering bites straight from the pages of PRIME.

Completely FREE! No bookings required, just drop on in.

Come hang out, grab a brew, get your book signed, and celebrate the ultimate guide to cooking meat!

MEAT, FIRE
AND CURIOSITY.

Jess Pryles is an Australian-born, Austin-based cook, author, television host and meat science graduate. She is the founder of Hardcore Carnivore and co-founder of the Australasian Barbecue Alliance.

Jess did not grow up knowing how to cook meat. A first taste of Texas barbecue set off a fascination with what makes meat behave the way it does, from cuts and grading to fire management and flavour. She learned by cooking, travelling and asking questions of ranchers, butchers, processors and meat scientists.

That curiosity became a career spanning television, books, public speaking and product development. Jess later completed a Graduate Certificate in Meat Science at Iowa State University, adding formal study to years of practical experience.

Through Hardcore Carnivore, Jess has turned the same approach into an international range of seasonings, tools and content. Whether she is judging a cook, explaining a technical idea or developing a product, the goal remains simple: understand the subject properly and make that knowledge useful.

Jess lives in Austin, Texas, where barbecue first drew her in and where live fire still forms the centre of her work.
