Collection: Ultra Culture

Ultra Culture is a fermentation outfit with a kiosk in Brunswick, just around the corner from us. They make lacto-fermented hot sauces and condiments from fresh ingredients, and run hands-on hot sauce making workshops. In their words, they're here for the food freaks, fermented fairies and pickled people.

Lacto-fermentation gives these sauces a tangy, rounded flavour you don't get from a straight vinegar sauce. We stock Morita & Garlic for smoky depth, Fermented Garlic Habanasco for a punchy everyday splash, Pineapple Mountain Pepper with native pepper berry, and Fermented Mandarin Habanero. Mustard Pickle Sauce and Sweet Chilli Sauce round out the range.

Splash Morita & Garlic on steak tacos, or use Mustard Pickle Sauce on a fried chicken burger. See more in our hot sauce range. Free shipping over $149, or click & collect in Brunswick.

Which Ultra Culture sauce for which job

  • Tacos, eggs and beef: Morita & Garlic. Morita is a smoked chilli, so this one sits nicely with grilled steak, brisket tacos and breakfast eggs.
  • Everyday heat: Fermented Garlic Habanasco. A tangy, garlicky habanero sauce for pizza, pasta, burgers and anything that needs a lift.
  • Seafood and pork: Pineapple Mountain Pepper and Fermented Mandarin Habanero. Fruity and bright, good with grilled prawns, fish, pork belly and ham.
  • Burgers and sangas: Mustard Pickle Sauce. Tangy and sharp, built for burgers, hot dogs and cold cuts.
  • Dipping: Sweet Chilli Sauce. Use it for spring rolls, wings and grilled chicken skewers.

Why fermented hot sauce?

Lacto-fermentation lets natural bacteria turn sugars into acid over time. The result is a more complex, tangy sauce with a softer edge than a straight vinegar hot sauce. Keep bottles in the fridge once opened and give them a shake before use.

How to use them

Add fermented sauces at the end of a cook or at the table. High heat dulls the tang. Stir a spoonful into mayo or sour cream for a quick dipping sauce, or splash over smoked jalapeño poppers just before serving. If you want to try making your own, Ultra Culture runs hot sauce workshops in Brunswick.
