What each part does

  • Drum Smoker Ash Catcher: Mounts to the charcoal nest of a BPS drum smoker and catches ash as it falls, so clean-up is a lift-out job instead of a scoop-out job. Big Poppa make it specifically for the BPS drum, so check your smoker before buying. Fitting it needs a drill, a 1/4" bit and a 7/16" spanner.
  • Stainless Steel Rib Hanging Rack: Sits across the top of the drum so you can hang ribs on hooks. Hanging gives every rack even heat and smoke and fits more meat in a small cooker.
  • Beefy Stainless Steel Charcoal Nest: The fuel basket at the bottom of the drum. A full nest of lump or briquettes is what gets you through a long, low cook.

Hanging ribs in a drum

Trim the ribs, season with a rub from our pork rubs range, and hook them through the meat between the second and third bones. Keep the drum running around 120 to 135C. Hanging means fat drips straight onto the coals, which adds that classic drum smoker flavour. Sauce towards the end if you like a glaze.

Fuel and extras

Drums run best on quality charcoal with a few chunks of wood on top. Grab a reliable probe from thermometers so you can watch pit and meat temps without lifting the lid.
