The Best Smoked Meatloaf

Smoked meatloaf is proper comfort food with a BBQ twist. A juicy mix of beef and pork mince picks up a gentle hickory smoke, a savoury coffee-rub depth and a sticky, tangy glaze on top. It slices beautifully, feeds the whole family and is just as good in a sandwich the next day. Made for cold winter nights, lazy Sundays and anyone new to the smoker looking for an easy win.

Soak the bread in milk, then mix in the mince, onion, eggs, Tuffy Stone Daily Grind Coffee Rub and Rum and Que Meat Juice BBQ Sauce, going easy so it keeps its texture. Shape it in a Weber Large Foil Drip Pan and smoke at 120°C with Traeger Hickory Pellets for about 2.5 hours, until a Thermapen ONE reads 75°C. Brush on more Meat Juice for the last 5–10 minutes so the glaze tacks up, rest briefly, then carve with a Victorinox Slicing Knife. Perfect on any of our pellet grills.

Pit notes

Go wild with the mince. Swap the beef for kangaroo, venison or other game mince for a deeper flavour.

Don't over-mix. Mix just until everything's combined so the meatloaf keeps its texture.

Tack up the glaze. Brush on Meat Juice for the last 5–10 minutes, just long enough for it to go sticky.

How to cook it

  1. Prepare smoker at a temperature of 120°C (250°F). I recommend a medium smoking wood or pellet such as hickory for this cook.

  2. Combine milk and bread. Set aside for about 10 minutes.

  3. Add remaining ingredients to the bread mixture and combine until everything is evenly mixed. Try not to over-mix so that the mince keeps its texture.

  4. Form the mixture into a loaf shape on a smoker safe pan, place the pan in the BBQ and smoke until the internal temperature reaches 75°C (165°F). This will take approximately 2.5 hours.

  5. Glaze with some more 'Meat Juice' BBQ sauce for the final 5-10 minutes, just long enough for the sauce to tack up.

  6. Remove the meatloaf from the smoker when done, cover and allow to rest for 5-10 minutes before carving and serving.
