Poached & Grilled Octopus

Poached and grilled octopus is the seafood dish that turns heads at any summer BBQ. A gentle simmer with veg and kombu makes the tentacles beautifully tender, then a blast over hot charcoal gives you crispy, charred skin and a big hit of smoky flavour. Soft inside, crunchy outside, fresh and vibrant. It's a ripper for seafood lovers, long lunches and anyone keen to cook something a bit different on the grill.

Bring a pot of chopped onion, celery, carrot and kombu to the boil, then 'scare' the octopus by blanching the tentacles three times before it goes in. Simmer for 30 minutes and chill it in the fridge. Once cold, season with Meat Church Blanco, oil it up and cook it directly over the coals until the skin crisps. Fire up Kamado Joe Big Block XL Lump Charcoal in a Weber RapidFire Chimney Starter and turn the tentacles with Kamado Joe Krafted Steel Tongs.

Pit notes

Scare it. Dip the tentacles into the boiling water three times before the octopus goes in. They curl up nicely and the skin stays intact.

Gentle simmer. Drop the heat as soon as the pot comes back to the boil. A rolling boil breaks the skin and toughens the octopus.

Hot and dry. Chill it, pat it dry, oil it and grill it straight over hot charcoal until the skin crisps. Skewer it, split it into tentacles or cook it whole.
