Hunger-Smashing Hanger Cheesesteak

This hunger-smashing hanger cheesesteak is built for late nights, good mates and a few cold beers. Marinated hanger steak is seared hot and direct, sliced thin and piled into toasted rolls with buttery onion, capsicum and mushrooms under a blanket of melted smoked scamorza. Beefy, rich, gooey and seriously satisfying. It might not be an authentic Philly cheesesteak, but nobody at your BBQ is going to complain.

Marinate the hanger for 4 hours, then sauté the veg in butter on a flat plate or a Kamado Joe Half Moon Cast Iron Griddle. Cook the steak over direct heat for 2 minutes a side, flipping 3 to 4 times, and pull it at medium-rare, about 53°C on a Thermapen ONE. Rest it, slice it thinly against the grain (really important) and season with Rum and Que Garlic Butter. For a kick, add El Pato pickled jalapeños, or go saucy with The Feedlot Lot Sauce or Gold Rush mustard.

Pit notes

Against the grain. Hanger has long, coarse fibres. Slice it thinly across the grain or it'll be chewy.

Pull it at medium-rare. Take it off at about 53°C (135°F). Hanger is at its best medium-rare.

Swap the cheese. The Que Club's tip: no smoked scamorza? Any semi-soft cheese that melts well will do.

Ingredients

  • 1kg hanger steak (if you can find wagyu it’s definitely worth the extra dollars per kilo)
  • Pancho & Lefty Steak Marinade
  • 1 Large White Onion, sliced
  • 1 yellow capsicum, sliced
  • 300g button mushrooms
  • 100g butter
  • 6 soft white rolls
  • 250g smoked scamorza cheese, thinly sliced
  • Rum & Que “Garlic Butter” finishing seasoning

How to cook it

  1. Clean up your hanger, remove any daggy bits or silver skin.

  2. Mix 1/4 cup of Steak Marinade with 700ml water, and pour over the steak, let it marinate for 4 hours.

  3. On your barbecue's flat plate, plancha or in a heavy-bottomed pan, melt the butter and start to sauté the onion, capsicum and mushrooms.

  4. Pat the hanger steak dry, cook over direct heat. Cook for 2 minutes on each side and flip 3-4 times. Take it off when it reaches medium-rare, that's an internal temp of about 53°C (135°F). Hanger is best eaten medium-rare.

  5. Let the steak rest for a few minutes off the heat. While it rests slice the rolls and lightly toast them.

  6. The veggies should have softened and started to caramelise by now, lay the scamorza on top and let it melt. Divide it between the 6 rolls.

  7. Slice the hanger, thinly, against the grain (this is really important), season with Garlic Butter Dust and add it to the rolls.

  8. Add pickled jalapeños, sriracha mayo or "Old Yella" Habanero Mustard, if you like a kick. Serve and enjoy.
