Beer Brined Brick Chicken

Beer-brined brick chicken says goodbye to bland poultry for good. A whole spatchcocked chook soaks overnight in a beer brine, then grills flat under a foil-wrapped brick for crispy, golden, crackling skin and tender, juicy meat with a hint of beer in every bite. It's a cracking centrepiece for a Sunday family BBQ or a backyard feed with mates, and a simple technique that delivers big results on any charcoal grill.

The night before, spatchcock the bird and brine it in a cup of Meat Church Bird Baptism mixed with a litre of light, low-bitterness beer for at least 6 hours. Next day, set up for direct cooking at a medium 180–200°C over B&B Oak briquettes. Rinse, pat dry, coat with Elk Creek Cajun Stinger and drizzle the breasts with olive oil. Cook skin side down under a brick or a Scanpan Protein Press for 15 minutes, then flip for another 10–15 minutes until cooked through; confirm with a Thermapen ONE. Serve with The Feedlot Lot Sauce or lemon aioli.

Pit notes

Pat it dry. Rinse off the brine and dry the skin well so it crisps under the brick.

Weight it evenly. A foil-wrapped brick or heavy cast-iron pan presses the bird flat for even colour and grill marks.

Swap the brine. The Que Club tip: switch the beer for chicken stock, or add fresh citrus slices and herbs.

Ingredients

How to cook it

  1. The night before. Take a large knife (or kitchen shears) and cut down either side of the chicken’s spine, and remove it. Press firmly down on the breast bone, to flatten the bird.

  2. Mix one cup of Bird Baptism with the beer in a container large enough to hold the chook, add the chook and top up with water to submerge, leave in the fridge for at least 6 hours (overnight is best).

  3. The Day Of. Set your grill up for direct cooking, you want a medium temperature.

  4. Grab an old garden brick and wrap in foil (a heavy cast iron pan or similar will work too).

  5. Rinse the chicken under cold running water, and pat dry with paper towel.

  6. Give it a good coating of Cajun Stinger inside and out, then a drizzle of olive oil on the breasts.

  7. Cook skin side down with the brick on top for 15 minutes until the skin is a deep golden colour with great grill marks.

  8. Remove the weights and flip the bird, let it cook for another 10-15 minutes until cooked through.

  9. Cut into quarters and serve with a fresh garden salad and lemon aioli.
