Collection: Rubs & Sauces

The whole BBQ pantry in one place: rubs and seasonings, BBQ sauces, hot sauces, glazes, injections and brines, pickles, tallow and condiments. It's one of the biggest rub and sauce ranges in Australia, and the Que Crew cooks with it every week in the store and the cooking school.

Start with the cut. Beef rubs lean on salt, pepper and garlic for a bark on brisket and steak. Pork rubs and chicken rubs bring more sugar for colour on ribs, butts and wings. Then pick a BBQ sauce or glaze to finish, and a hot sauce for the table.

You'll find Meat Church, Blues Hog, Lane's BBQ, Hardcore Carnivore, Meat Mitch, Rum and Que, The Feedlot, Four Monkeys and dozens more. Not sure what goes with what? Ask us in store in Brunswick, or learn it hands-on in one of our BBQ classes. Free shipping over $149.

How to build a BBQ pantry

You don't need fifty bottles. A handful of well-chosen rubs and sauces covers almost every cook.

  • A beef rub: salt, pepper and garlic based, like an SPG or a Texas-style brisket rub. Works on brisket, steak, beef ribs and burgers.
  • A sweet rub: for pork and chicken. Sugar caramelises into that red, glossy colour on ribs and pulled pork.
  • An all-purpose rub: the one you reach for on a Tuesday night. Chicken thighs, veg, eggs, chips.
  • A BBQ sauce: pick one sweet, tomato-based sauce to glaze ribs and one tangy or mustard sauce to cut through fatty cuts.
  • A hot sauce: for the table, the wings and the breakfast eggs.

Rub, then sauce: the order matters

Season first so the rub has time to set and form bark. Sauce goes on at the end, usually the last 20 to 30 minutes, because sugar burns at high heat. Glazes are thinner and sweeter and go on even later, just to set.

Binders, brines and injections

A thin layer of mustard, oil or hot sauce helps a rub stick but adds little flavour. For big cuts and whole birds, a brine or injection seasons the inside of the meat where a rub can't reach. Browse injections and brines.

FAQs

What's the difference between a rub and a seasoning?

Not much. Rubs are usually blends made to build bark on low and slow cooks. Seasonings tend to be simpler, like salt, pepper or garlic, and go on anything. We list both together.

When should I put BBQ sauce on?

In the last 20 to 30 minutes of the cook, or after it comes off. Most BBQ sauces have sugar that burns if it goes on too early.

How long do rubs last once opened?

Most rubs keep their flavour for 6 to 12 months if the lid stays on and they're kept somewhere cool and dry. Check the best-before date on the pack.

Do I need a different rub for every meat?

No. An all-purpose rub plus a beef rub and a sweet rub covers almost everything. Specialist rubs are there when you want to fine-tune.

Do you ship rubs and sauces Australia-wide?

Yes. Rubs and sauces ship Australia-wide, with free shipping on orders over $149, or click and collect from our Brunswick store.
