Coming from high on the pig, meaty loin ribs (also called baby-back ribs) have a sweeter, cleaner flavour than ribs from the belly area. Australian pigs are much smaller than American hogs, and with lean loin meat on the bone these ribs are a great, quciker low and slow cut. Ideal cooking time is around 3 hours.
