To make fire, you need fuel, air and something to ignite it. Once you’ve loaded your Karu 2 Pro with fuel and your fire started, you can use the oven’s rear and chimney baffles to control the airflow and, therefore, the intensity of the flames.
The Karu 2 Pro draws cold air into the rear of the oven. As the air passes over the burning fuel tray, it heats up and drives the flames through the oven and out the chimney.
Use the rear baffle to control air coming into the oven, and the chimney baffle to restrict the air drawn out of the oven. Once you get cooking and practice using the baffles, you’ll discover how effective they can be for temperature control. You’ll also discover a whole new world of recipes and dishes to cook in your Karu 2 Pro – from pizza to steaks to Buffalo wings and more.
● Keep the rear and chimney baffles both fully open for high-temperature cooking (e.g. Neapolitan-style pizza, searing steaks or grill-style cooking).
● To lower the temperature if the oven is too hot, or for lower-temperature cooking or baking and roasting, keep the rear baffle fully open and the chimney baffle closed
● If you’re after smokey flavors or want to roast meat or fish even lower and slower, heat the oven as normal with both rear and chimney baffles fully open. When the oven reaches your desired temperature, close both baffles.
