Noble Handcrafted makes small-batch maple syrups using syrup from heritage sugar shacks in Quebec's maple orchards. They're known for infusing and barrel-ageing their syrups, and the bottles look the part on a shelf or as a gift.

We stock two of them. Noble Tonic 01 is matured in charred American oak bourbon barrels from New York's Tuthilltown distillery, which gives it a bourbon and oak flavour. Noble Tonic 02 is infused with Tahitian vanilla bean and Egyptian chamomile.

Which Noble syrup for which job

  • Pork, ribs and roast veg: Tonic 01 Bourbon Barrel Matured. Glaze pork, Brussels sprouts or sweet potato. It also works in bourbon and whiskey cocktails.
  • Breakfast and dessert: Tonic 02 Tahitian Vanilla. Pour over pancakes, French toast, yoghurt or ice cream, or use it to sweeten a dressing.

How to glaze with maple

This is where Tonic 01 earns its spot next to the rubs. Maple syrup burns quickly, so add it at the end. On the smoker, brush Tonic 01 on ribs or burnt ends in the last 20 to 30 minutes and let it set. Mix it with a little BBQ sauce or butter for a thicker glaze. On the grill, glaze over indirect heat, not straight over the coals. Both syrups come in 450ml bottles and make a good BBQ gift for someone who likes to cook. Keep the bottle in the pantry and give it a shake before pouring.
